Easy Week Night Dinners

This may not be as quick to prepare as Emily's delicious chicken but it doesn't take that long to make. If you have time to boil a pot of water, you will have time to make this.

All'amatriciana

You will need:
half an onion
tomato sauce
pancetta (or bacon cut into tiny pieces)
red wine
pasta -this goes best with bucatini, rigatoni or spaghetti

Put a pot of water on to boil. Make sure to add salt at some point.
Dice up your onion and saute with some olive oil in a small saucepan. Add your pancetta. Now add some red wine and over a high heat let it evaporate. When the wine is almost gone add your tomato sauce, sprinkle some salt in there and lower your hear. Put a lid on and let that cook. After a few minutes, check to see if there is enough salt to your liking. The sauce is done when it's of a thicker consistency.

Sprinkle with pecorino or some regular grated cheese.
